in my kitchen: rice pudding

every year i make rice pudding for my office around christmas time.  it's my boss's favorite dessert and we all enjoy it as well.  its such an easy recipe so i figured i could share it in case any of you want to try your hand at making some rice pudding this holiday season.  the recipe i follow is for a spanish rice pudding (arroz con leche) so it's a little bit different than traditional rice pudding.  but trust me, its delicious!

2 cups long grain rice
1/2 tsp. salt
8 cups whole milk
3 cinnamon sticks
2 tsp. freshly grated lemon zest
1.5 cup sweetened and condensed milk
2 tsp. vanilla extract
ground cinnamon to garnish

1. add 4 cups water to large pot over medium-high heat.  bring water to boil.  stir in rice and salt.  return water to boil.  reduce heat to low.  cook, covered, until water is absorbed and rice is tender, about 20 minutes.
2. stir in milk, cinnamon sticks and lemon zest.  increase heat to medium-high; bring milk to boil.  reduce heat to low.  cook, uncovered, stirring occasionally to prevent sticking and scorching, until mixture is thick and creamy, about 25 minutes.  stir in condensed milk and vanilla.  cook, stirring often, until flavor is absorbed, about 5 minutes more.
3.  pour rice pudding into serving bowl; serve warm or chilled.  sprinkle with cinnamon before serving.

i love cooking and having everyone enjoy my food.  ask junior, every time i cook dinner, i always watch to see his reaction and ask him "well, how is it?"  i think he gets annoyed that i do that every time but it really makes me happy ;)






















ps- i love this sweater!  my apartment is so friggin cold because we kind of still have our air conditioning units in the windows ;)  so i make it a point to always be bundled while home!

  2. I love arroz con dulce (thats what we call it in my house, since for us arroz con leche is a savory dish)!! My gmom is the one who makes it here but maybe i can take a swing at following you recipe!

    1. it's honestly so simple to make!! you just have to watch the pot once you put the milk in because it can boil over ;)
