in my kitchen: pineapple avocado shrimp tacos
August 07, 2017i shared a few pictures on my instagram stories a few weeks back of this amazing dinner i cooked for junior and me and got so many messages asking me for the recipe! i was honestly just in the mood for tacos (i always am) and thought it would be fun to have something different. i also thought junior was going to hate dinner because he's a very, very picky eater. but this meal was junior approved! and that says a lot!
recipe for pineapple avocado shrimp tacos (serving for 2)
pineapple avocado salsa:
1/2 cup of diced pineapples
1/2 avocado, cubed
2 tablespoons chopped onions
1 tablespoon minced jalepeno
1 tablespoon of chopped cilantro
1 teaspoon honey
1/2 teaspoon lemon juice
salt and pepper to taste
mix all the veggies except for the avocado in a bowl. add remaining ingredients and mix slightly. that's it. super simple!
shrimp:
25-30 medium sized, uncooked shrimp
salt and pepper to taste
chilli powder to taste
a drizzle of olive oil
1 table spoon of lemon juice
mix all ingredients in a bowl. heat a pan on medium-high heat. cook shrimp until pink on both sides. and viola!
junior likes the flour tortillas so that's what i buy but you can use corn tortillas as well. i also like to heat my tortillas on a pan. oh! and i would 100% use that pineapple avocado salsa with any other kind of meat or just eat it on it's own with tortilla chips. it is that good!
